Halloween Inspired Drink - Coconut Longan Eyeballs Drink

Coconut Longan Drink - easy to make but flavorful and extremely refreshing. We really love coconut water/juice in our household. We are always looking for new ways to use coconut water in our drinks. Here is a super simple and refreshing drink recipe for you guys. You can make this drink within minutes and with just a few ingredients.

To make it more spooky and ready for Halloween, we filled the longan with boba/tapioca pearls. This gave the drink an eyeballs in a glass effect. You can easily change up the look for any other occasion by simply adding the boba and the longan separately.

Ingredients

  • 1 can/17.6 fl oz of Coconut Water or Coconut Juice (remove any coconut pulp)

  • 1/8 cup of Black Boba

  • 1 cup of Water

  • 1 can/20 oz of Longan in Syrup


Instructions:


Step 1) Bring the water to boil in a cooking pot.

Step 2) Add the boba and let it cook for about 4-6 min.

Step 3) Drain the water and put the boba in cold water to prevent them from sticking together.

Step 4) Separate the longan from the longan syrup. Save the syrup for later use.

Step 5) Fill each longan with a boba. Place the boba filled longan in a cup gently so that the boba remain inside.

Step 6) Add 3 tbsp of the longan syrup to each cup and fill it up to the top with the coconut water/juice (make sure to remove the coconut pulp if there's any).

Now you have yourself a delicious Halloween themed tropical drink.

Tips:

*Be gentle when you pour the coconut water/juice and longan syrup to keep the boba inside of the longan for the eyeball visual effects.
