Baked Salmon Head with Dipping Sauce



The first time I heard about baked salmon head was at my brother's house. My first response when I was asked to try baked salmon head was: Is there anything on the salmon head to eat? Does it taste good?



To my surprise, it actually tasted really good. And yes there is meat on the salmon head. It can be quite addictive. Ever since then I came up with few different recipes to bake salmon heads at home but by far this is my favorite recipe. The garlic and the lemon grass really helps with hiding the fishy smell. It tastes amazing with a dipping, you can totally adjust the spice level according to your taste. If you are questioning like I did or just curious how salmon heads taste, then you should definitely give this recipe a try. You might just fall in love with this dish!


Ingredients:


Marination

  • 1 Salmon Head

  • 1 Tbsp of Garlic Powder

  • 1 ½ Tbsp of Onion Powder

  • 1 tsp of Salt

  • 1 Tbsp of Paprika

  • 2 Tbsp of Oyster Sauce

  • 1 Tbsp of Minced Garlic

  • 1 Tbsp of Lemon Grass

  • 3 Tbsp of Unsalted Butter (melted)

Dipping Sauce

  • 2 Garlic Cloves (minced)

  • 2 ½ Tbsp of Shallot (Halves and sliced)

  • 1 Tbsp of Lemon Grass (sliced)

  • 1 tsp of Sugar

  • 1 ½ tsp of Pepper Flakes

  • ¼ cup of Oyster Sauce

  • 2 tsp of Soy Sauce

  • ½ cup of Water

  • 6 Tbsp of Green Onion (sliced)

  • 2 Tbsp of Cilantro (chopped)

  • 1 Red Pepper (medium size)


Instruction:


Cut the salmon head in half, length-wise. Then remove the gills from the salmon head (you don't need the gills). I find it easier to use a knife for cutting the salmon head and using a kitchen shear to remove the gills.


Place the salmon head into a large bowl. Add the salt, garlic powder, onion powder, paprika, oyster sauce, minced garlic, and lemon grass to the salmon head.



Massage the salmon head thoroughly with the ingredients. Add the melted butter to coat the salmon head. Gently massage the butter in and marinate for about 30 min or more.


While the salmon head is marinating, we will be making the dipping sauce. In a bowl, add the minced garlic, sliced shallots, sliced lemon grass, sugar, pepper flakes, oyster sauce, soy sauce, water, and red pepper.



Give it a good mix.



Now add the cilantro and green onion to the sauce. Give it a final stir and the sauce is ready.



Pre-heat the oven at 425 °F. Prepare a baking sheet lined with tin foil. Use cooking spray or a little bit of oil to prevent the fish from sticking to the baking sheet. Add the salmon head to the baking sheet. Bake the salmon head for about 30 - 35 min.


Step 5) Once the fish it cooked, serve it with the dipping sauce and enjoy!


Tips:

  • Use a sharp knife to cut the salmon head length-wise and use a kitchen shear to remove the gills.
