Halloween Inspired Bat and Monster Scones - Ube White Chocolate Chip Scone Recipe


We are absolutely in love with these Ube White Chocolate Chip Scones. The light flavor of Ube combined with the white chocolate chips and walnuts is just simply amazing. The white chocolate chip gives it a little extra sweetness and the chopped walnuts add a little crunch to it. And the beautiful vibrant purple color that comes from the Ube, what can we say? It is mesmerizing. Being delicious and pleasing to the eyes, this recipe is sure to satisfy your sweet cravings.



Now, Halloween is knocking at the door, and the color purple paired with black and white screams Halloween. So we have decided to turn our beautiful Ube White Chocolate Chip Scones into Bats and Monsters for this Halloween. They turned out perfect. Kids will love these scones. These are perfect for a Halloween party or any monster theme party. Remove the eyes and the wings, and you can enjoy them on any other occasion.


These scones pair perfectly with tea or coffee. They are great for breakfast but you can also enjoy them as a dessert. We even eat them as a quick snack (no judgement please). We like to have them with a little bit of whipped cream or a scoop of vanilla ice cream on top; that just makes it a little more fancier!



All right, so here's what you will need to do to make these delicious scones:


Ingredients

  • 2 ½ cups of All Purpose Flour

  • ½ cup of Sugar

  • 2 ½ tsp of Baking Powder

  • ½ tsp of Salt

  • ¾ cup of White Chocolate Chips

  • ½ cup of Chopped Walnuts

  • ¾ cup of Heavy Whipping Cream

  • 1 tsp of Vanilla Extract

  • 1 ½ tsp of Ube Extract

  • 1 Egg

  • 1 stick/8 tbsp of Butter (frozen and food process/blender)

  • 10 piece of Black Candy Melts

  • 16 piece of White Candy Melts


Instructions:


1) Put the flour, sugar, baking powder, and salt into a mixing bowl.



2) Use a food processor, blender, or grater to grate the frozen stick of butter.


3) Add the grated butter to the flour mixture. Using your hand, mix the butter and flour mixture until the butter is fully coated. Do not over mix it to prevent the butter from melting. Place the mixture in the freezer or refrigerator while you work on the liquid ingredients to keep it cold.


4) Put the egg, heavy whipping cream, vanilla extract, and ube extract into a mixing bowl. Give the liquid ingredients a good mix.



5) Pour the liquid mixture into the flour mixture bowl.


6) Add the walnuts and white chocolate chips in to the mixture.



7) Using a silicone spatula, give the mixture a good stir just enough for the liquid and dry ingredients to combined.



8) Form a ball with the scone dough.


9) Place the dough ball on top of a surface lightly coated with flour. Using either your hand or a rolling pin, flatten the dough ball into a round disc. The disc should be about 8"-9" inches diameter and 1" high.



10) Cut the scone disc into 8 pieces and put it into a baking sheet lined with parchment paper or non-stick baking mat. Make sure to leave enough spaces between each scones because they will expand while baking.



11) Place the scones in the freezer or refrigerator for about 10 minutes while you pre-heat the oven at 400 degree F.



12) Bake the scones for about 18 - 20 min.


13) While the scones are baking, prepare the eyeballs with the candy melts.


14) Place the white candy melts on top of a parchment paper.


15) Microwave the black candy melts for about 30 seconds or until melted and transfer it to a piping bag or resealable plastic bag. Cut a tiny hole on the piping bag/resealable plastic bag.



16) Pipe a small black dot (for the pupil) on top of the white candy melt and let it cool until it harden. With the left over black candy melts, you can pipe wings or teeth to decorate your scones.



17) Once the scones are finished baking, take it out of the oven and let it cool for few minutes. While the scones are still warm, place the candy melt eyeballs on top of the scones. Make sure the scones are warm but not too hot to prevent the candy melt from completely melting.



18) Let scones cool and add the wings.

Tips:

* Keep all the ingredients as cold as possible. * Do not over mix or over handle your ingredients to prevent the butter from melting. You want to prevent the butter from melting before baking so that you can get flaky scones.
