Goat Meat/Mutton Curry Recipe



One of our favorite dish that we often make is Goat Meat/Mutton Curry. It's full of spices and taste amazing with rice or naan. We got many requests to make this recipe and now we finally got a chance to get to it. If you have a stove top pressure cooker or an instant pot, it will definitely cut down your cooking time a lot. However, you could still make this dish with just a cooking pot as well, but it will just take you much longer to cook the meat if you like it on the softer side.


Ingredients:

  • 2½ - 3 lbs of Goat Meat

  • 2 Tbsp of Yogurt

  • 2 Large Onions ( 1½ Sliced, ½ Paste)

  • 1½ Tbsp of Ginger Garlic Paste

  • 2½ tsp of Salt

  • ⅔ Cup of Oil

  • 2 Tbsp of Ghee Or Butter

  • 2 Large Potatoes

  • 1½ Tbsp of Cumin Powder

  • 1½ Tbsp of Coriander Powder

  • 1½ tsp of Red Chili Powder

  • 1¼ tsp of Garam Masala Powder

  • 1tsp of Turmeric powder

  • 4 Cardamom

  • 1 Large Cinnamon Stick

  • ½ tsp of Cumin Seed

  • 5 - 7 Whole Black Pepper

  • 2 Large Bay Leaves

  • Water

  • ½ tsp of Paprika (optional)


Instructions


1. Start by marinating the meat with the yogurt. Gently massage the meat and make sure that it's evenly coated. Set aside and let it marinate for at least 1 hr or more if possible.


2. Cut 1½ onions into thin slices. Use a food processor or a blender and process the left over ½ onion into a paste.


3. Using a 6 qt. pressure cooker, add the oil and ghee. Let it heat up on medium heat until it is hot (about 1-2 min).


4. Next add the bay leaves, cinnamon stick (break in half), black pepper, cardamon pods (open slightly), and cumin seeds into the pressure cooker. Give the whole spices occasional stir and let it cook for few minutes until brown.


5. Add the sliced onions and let it cook until translucent.


6. Next add the ginger garlic paste and let it cook for few minutes on medium high heat and let it cook for about 2-3 minutes. Give it an occasionally stir.


7. Now add the onion paste. Stir occasionally and let the liquid from the onion paste dry a little. Cook until the oil start separating from the mixture (about 3-4 min).


8. Add powder spices: cumin powder, coriander powder, red chili powder, turmeric powder, salt, and 1 tsp of garam masala powder (save the rest of the garam masala powder for later). Give it a good mix and let it cook slowly on low heat. It's important to let the spices cook well and stir frequently to prevent it from having a strong smell and flavor of raw spices. Add water as needed to deglazed and also help prevent it from burning. Will take about 10 - 15 min to cook the spices.


9. Once the spices and oil starts to separate, add the meat. Give it a good stir to coat the meat with the spices and let it cook on high heat for about 5-7 min.


10. Add paprika to help give the meat a reddish color (optional).


11. Add potatoes and let it cook for about 1-2 min. Give it a good stir.


12. Next, add water enough to just cover the all meat. Bring the liquid to boil.

  • If using a stove top pressure cooker, close the lid properly and cook for about 40 - 50 min on medium heat (make sure to follow your pressure cooker user and safety instructions).

  • If using in an instant pot/electric pressure cooker, close the lid properly and cook for about 60 min - 75 min on high pressure (make sure to follow your pressure cooker user and safety instructions).

  • If using a regular pot, cover the pot with a lid and let it cook on medium heat for at least 1½ hr. Give it an occasional stir and add more water as needed. You can also cook for longer to help soften the meat more.


13. Once the pressure cooker unlocked, add the rest of the garam masala powder and give it a good mix.


That's it and now you are ready to serve it with rice or naan.



Tips:

* The leg parts with bones usually taste the best in my opinion. Add a mixture of leg parts with meaty part for best turnout.

* Use a stove top pressure cooker to make cooking the goat meat faster and softer.

* This recipe give you a baseline for cooking the goat meat, but feel free to increase/decrease the salt, spiciness level, and/or water as per you preference.
